The culture of Madrid is steeped in religion and royal history. Cathedrals and churches are plentiful in Madrid, and medieval architecture is as well. Citizens of Madrid (referred to by themselves as Madrileños) are heavily influenced by the harsh climate. During the hottest hours of the afternoon, from 2.00P.M. to about 5.00 P.M., some Madrileños still engage in the traditional siesta, where the majority of people flock inside and most businesses are closed. Food is Madrid is heavily influenced by Mediterranean cuisine. The most famous dish from Spain are the appetizers, Tapas, that are often served at bars and small cafes before a main meal. Remember that Spaniards have a three-course meal from 1-3.00 pm and a lighter meal from 9.00 pm, the direct opposite of western eating trends.
